1lb.split peas **(soaked for 8 hours in water with Vitamin C added)

Instructions
Place first 5 ingredients in a soup pot on medium heat and "cook" spices for 1 minute. Add onions and celery. Saute stirring frequently until onions and celery are clear. Add 2 quarts boiling water, split peas, carrots, and shredded potato.
Simmer for 2-4 hours, adding water as needed to desired consistency.
NOTE: I make these recipes up so the seasoning measurements are estimates. Use common sense and season to taste!
