Slplit Pea Carrot Soup

Ingredients
  

  • 1/2-3/4 tsp. Himalayan salt
  • 1/4-1/2 tsp. smoked paprika
  • 4 cloves garlic, finely chopped
  • 1 tbsp fresh ginger root, chopped
  • 1/4 cup olive oil, extra virgin
  • 5 med. onions, finely diced **
  • 6 stalks celery, diced **
  • 8 carrots, shredded or finely chopped **
  • 3 med. red skin potatoes, peeled and shredded **
  • 1 lb. split peas ** (soaked for 8 hours in water with Vitamin C added)
  • Water

Instructions
 

  • Place first 5 ingredients in a soup pot on medium heat and "cook" spices for 1 minute. Add onions and celery. Saute stirring frequently until onions and celery are clear. Add 2 quarts boiling water, split peas, carrots, and shredded potato.
  • Simmer for 2-4 hours, adding water as needed to desired consistency.
  • NOTE: I make these recipes up so the seasoning measurements are estimates. Use common sense and season to taste!
