Hot Shot Biscotti
Ingredients
- 2/3 cup waluts
- 2 tbsp water
- 1/2 cup pure maple syrup
- 1 tbsp vanilla extract
- 1 cup whole wheat white flour
- 1/2 cup oat flour
- 1/4 cup oats
- 1/3 cup dried cranberries
- 1/3 cup nuts of choice, toasted (hazelnuts)
- 1/3 cup pistachio
- 1/3 cup non-dairy chocolate chips
Instructions
- Preheat oven to 350° and line a baking sheet with parchment paper. In a food processor, blend walnuts and water until a lump. Add maple syrup and vanilla, blend in. Pulse in flours and oats with a few rotations. Add cranberries, nuts, chocolate chips. (Blend a few more times.)
- Remove dough - form a 9"x13" log. Bake 25 min (cool for 8 mins.). Cut 1/2" slices with serrated life Place slices on side. Bake at 300° for 10 mins. Flip sides and bake 10 more minutes. Cool and serve when crisp.
